Generally, I collect payments from each family or household separately — so one person isn't fronting the cost for everyone and waiting to be paid back. How it's structured depends on the trip and how the group wants to handle it, but my goal is always to make sure no single person is carrying the financial coordination on top of everything else.

"We have very different budgets within our family. Is that a problem?"

It's more common than you'd think, and it's very workable. There are properties and itineraries where different family members can be at different price points without it being obvious or awkward. We can talk through what that looks like for your specific group.
